Planting density: 7,000 vines/ha Age of vines: 22 years
Grape varieties: 40% Cabernet Sauvignon – 8% Cabernet Franc - 46% Merlot - 6% Petit Verdot
Soil type: Deep fine gravel (quaternary silica-gravel deposits) Macau terroir
Cultural practices: Certified organic farming (FR-BIO-16) & biodynamic (DEMETER)
Harvest: Manual harvest
Harvest dates: From September 9 to 22, 2020
Vinification: Total destemming but no crushing, no added yeast Cement vats of 40, 45, 50, 55, 60, 65, 70, 75, 80 hl
Aging: On fine lees for 12 months in 400-liter barrels & 12 hl vats under reductive conditions, followed by a few months in cement vats before bottling (bulk aging) Extremely low sulfite levels (only additive)
Coopers: Taransaud (majority), Ermitage, Berthomieu
Bottling: March 16, 2022
2020 Production: 19,000 bottles – 500 magnums
