Champagne Billecart Salmon, one of the most prestigious Champagne house.
Today headed by François and Antoine Roland-Billecart, Billecart Salmon is one of the most illustrious champagne houses, family and independent for 6 generations, installed in 1818 in Mareuil-sur-Ay.
In place for 30 years, the head of cellar Francois Domi, tirelessly applies the motto "Privilege quality, aim for excellence". For two decades, he has relied on Denis Blee, director of the vineyard and manager of the cellars (thus farms, in a superb cellar of 450 barrels!).
Billecart Salmon house initiated the technique of cold racking shortly after 1950 and then the use of stainless steel tanks for a longer fermentation at low temperature. This method now allows the wines to keep their freshness and to see their aromas exhaled over time. Billecart-Salmon was released in the 1990s as the "best crude in the world" by the highly respected British magazine "Decanter" and has since been distributed worldwide (45% in France).
