Dominique Hauvette, a key figure in Provence
Dominique Hauvette produces fine red, white and rose wines of Provence, all organic. Known for her red wines, especially the great Amethyst, the rarity and originality of her whites make them very sought-after. Promoted 3*/3 by Revue du Vin de France guide 2019.
Located in Saint Remy de Provence, the estate covers 15 hectares. Planted on different appellation of Provence, the vines grow on a clay-limestone.
Dominique Hauvette bought vines and settled in 1988. During her life, she made encounters that inspired her as a winemaker: Eloi Dürrbach (Trevallon) and Laurent Vaille (Grange des Pères). Thanks to her strong personality, she has managed to create her own style, and has become over the years a key figure in the Provençal vineyard.
Discreet and charismatic winemaker, Dominique produces mainly red wines (80% of his production) in a very singular style. Some vintages are vinified in cement amphora (egg-shaped). Her whites are produced in very few bottles, and they hold their particularity by the grape varieties they come from: roussanne, marsanne, clairette (usually in Provence whites are more often from the grape variety). Blindly, it is difficult to recognize that the whites of Domaine Hauvette come from Provence (we would rather compare them to fine whites from the Rhone Valley).
The estate is organic certified and has been practicing biodynamic farming since 2003. It is a true philosophy for Dominique Hauvette, who pays great respect to the soil and the authenticity of the terroir: small yields, work in the vineyards and in the winery as natural as possible (vinification without sulfur), very little intervention. This allows the wines to better transcribe the identity of the terroir
