Domaine Jean Guiton - Ladoix 1er Cru
Located in Bligny-lès-Beaune, very close to Pommard, Jean Guiton established his estate in 1975.
His journey began with 2 hectares of vines under sharecropping. He built his first winery in 1977, along with a cellar and his house two years later. The estate gradually expanded across Ladoix, Aloxe-Corton, and Bligny-lès-Beaune, then into the Pernand 1er Cru, Savigny 1er Cru, and Beaune 1er Cru appellations, reaching 10 hectares by 1986. A new, more spacious and better-equipped winery, along with an aging cellar that can hold 300 barrels, was constructed in 1989.
A few plots in Volnay and Pommard were added before his son Guillaume Guiton took over in the early 2000s. Since then, he has worked on no less than thirteen cuvées, each with significant geographical differences that offer unique expressions. The vineyard now covers nearly 12 hectares, all located along the Côte de Beaune in the villages of Pommard, Beaune, Savigny-lès-Beaune, Pernand-Vergelesses, Volnay, and Ladoix-Serrigny.
The production consists of 95% Pinot Noir. Chardonnay and Aligoté make up the remaining 5% cultivated by the estate. Vine growing is always carried out with respect for the environment. The goal is to obtain the ripest and healthiest grapes possible, rather than to achieve high yields. All Village and Premier Cru wines are hand-harvested. The grapes are sorted and fully destemmed upon arrival at the winery.
Vinification takes place in cement, stainless steel, or wooden vats, with temperatures controlled throughout fermentation by a thermoregulation system. Punching down is done twice a day during maceration. All the crus are then aged in French oak barrels (20% of which are new) for a period of 12 to 18 months.
