Domaine de la Grosse Pierre, Pauline Passot à Chiroubles
The Domaine de la Grosse Pierre is located in the heart of the Beaujolais region, on the granite slopes of Chiroubles. It is certified organic since 2019.
Since 2018, Pauline Passot has been at the head of the estate which was created by her grandfather Georges Passot in the 1960s.
It was after various experiences as a sommelier in France and abroad that Pauline decided to return to her native land.
The estate covers 9 hectares of vines in the Chiroubles, Morgon and Fleurie appellations, made from the famous Gamay Noir with white juice.
The vinification is done in a natural way, using indigenous yeasts, with no added inputs or sulphites, in the traditional way, in whole bunches with some pumping over and above all in infusion during the whole maceration period (about ten days, at low temperature).
The wines are all vinified in the same way in order to bring out the best expression of the terroir.
