Mal Cal Demoura, among the best estates in Languedoc.
Created by Jean Pierre Jullien in 1970, Mas Cal Demoura is taken over by Isabelle and Vincent Goumard in 2003. These two passionate oenologists have raised their domain to the highest level. They have also bought superb plots at Mas Jullien, such as the Combariolles.
Today, they own 14 hectares of limestone and limestone clay on which they grow 11 red and white grape varieties. The vineyard is located on the famous "Terrasses du Larzac", a terroir with a very specific climate (which is an AOC since 2014 vintage). The climate is mediterranean and softened by the fresh air of Larzac. In summertime, the temperature range between night and day allows the berries to keep their acidity and gain an impressive aromatic palette, perfect to produce elegant and fine wines.
The objective is only qualitative. All the recipes to produce fine wines are applied here. Organic certification, low yields (20 to 30 hl / ha), old vines (35 years on average), plowing, organic amendments, hand harvesting (disbudding, suppression of the heart, leaf removal ...), controlled natural grassing, strict sorting of the grapes in the vineyard and on a sorting table. Always seeking the optimum phenolic maturity on each plot while preserving the fruit and freshness. In the cellar, same method: indigenous yeasts, vinification and ageing by single vineyard to better express the specificities of the terroir.
Very good blending skills enable the winemakers to take advantage of the multiplicity of grape varieties to sublimate the enormous work provided throughout the year and produce authentic wines.
